One thing Nick and I have always had in common is our love for food. I used to cook almost every single night for us, it was a great way to destress after work and we'd eat leftovers for lunch. For this new phase of our life, I look for meals that are simple ingredients and can come together in less than 30 minutes.

First, let's talk about some go to items from a few different stores and keep on hand. Sometimes, I will only go to Publix (which is the most convenient for where I live). We will typically go to Costco and Trader Joe's about every 4-6 weeks.

Costco

  • frozen mahi mahi

  • frozen wild caught shrimp

  • chicken tenderloin packs (we separate and freeze)

  • ground waygu beef (we separate and freeze)

  • frozen blueberries

  • Raos pasta sauce (2 pack)

  • salad kits (2 pack)

  • meal kits - we've had the tacos and stirfry noodles!

  • Kirkland frozen lightly breaded chicken nuggets

  • rosemary parmesan cheese loaf (we cut into thirds and freeze)

Publix

  • jasmine rice, brown rice, wild rice

  • rotisserie chicken

  • pre-marinated chicken thighs

  • pre-washed arugala, green leaf lettuce, romaine, spinach

  • premade meatballs

Sprouts

  • frozen organic produce

  • fresh produce

  • dry and wet seasoning or marinades

Trader Joe's

  • frozen orange chicken

  • frozen garlic naan

  • frozen cauliflower rice

  • salad kits

Easy to assemble meal ideas:

  • orange chicken or marinated chicken thighs, roasted broccoli, rice

  • rotisserie chicken, salad kit or roasted vegetable, with fresh bread

  • pre marinated chicken thighs, rice, and naan

  • mahi and shrimp grilled or skillet cooked with salads and roasted vegetables

  • Air fryer nuggets over a salad

Just like creating a recipe or feeding your little one, a spoon can be difficult to balance.  I hope to share ideas and experiences to help you find balance across varyious things - healthy living, intentional movement, or being a new parent!
